Valentine's Day Recipe Idea: Creamy Lobster and Truffle Risotto

Valentine's Day is the perfect opportunity to surprise your loved one with a delicious and refined dinner. To mark this special moment, why not opt for a recipe that is both indulgent and elegant? Here is an idea that combines the luxury of truffle, the delicacy of lobster, and the creaminess of a risotto. This will surely impress and delight your taste buds!



Ingredients (for 2 people):

  • 200g of Arborio rice (for risotto)

  • 1 lobster (or 2 lobster tails, shelled)

  • 1 small black truffle (or truffle oil if you prefer a simpler alternative)

  • 1 shallot

  • 1 garlic clove

  • 1 liter of vegetable or seafood broth

  • 200ml of heavy cream

  • 50g of butter

  • 50g of grated Parmesan cheese

  • 1 glass of dry white wine

  • Salt and freshly ground pepper


Preparation:

  1. Prepare the lobster: If using a whole lobster, cook it in a large pot of boiling salted water for about 10-12 minutes, until it turns bright red. Drain and let it cool before shelling. Cut the flesh into regular pieces.

    If using shelled lobster tails, sauté them in a pan with a bit of butter for about 2-3 minutes, then set aside.

  2. Heat the broth: In a saucepan, heat the vegetable or seafood broth over low heat so that it's hot when you add it to the risotto.

  3. Prepare the risotto: In a large pan or saucepan, melt 30g of butter. Add the finely chopped shallot and garlic, then sauté them over medium heat until they become translucent.

  4. Cook the rice: Add the Arborio rice to the pan and stir to coat it with butter. Let it cook for 1-2 minutes, then pour in the white wine. Allow the wine to evaporate completely.

  5. Cook the risotto: Gradually add the hot broth, one ladleful at a time, waiting for the liquid to be absorbed before adding more. Stir regularly to achieve a creamy texture. This step will take about 18-20 minutes.

  6. Finish the recipe: Once the risotto is creamy and the rice is cooked al dente, add the heavy cream, remaining butter, grated Parmesan, and lobster pieces. Stir well and season with salt and pepper.

  7. Truffle finishing touch: For a touch of luxury, finely grate the black truffle over the risotto just before serving. If using truffle oil, add a few drops at the moment of serving.


Presentation:

Serve the risotto in beautiful deep plates, then garnish with a little grated truffle, a sprig of fresh parsley, or even a few edible flower petals for an extra romantic effect.
